Chef’s Bio

JM-HBI-1Chef Justin Meyer joined the Hillbrook team in the spring of 2013 and quickly proved his skill and creativity in the kitchen. By 2015, he was named Executive Chef of Hillbrook Inn’s Redbook Restaurant, where he uses the freshest and highest quality ingredients to create exquisite chef’s choice tasting menus.

In addition to his flare for crafting dishes that highlight the best in farm-fresh ingredients while also blending unique flavor profiles, Meyer presents his food in a way that closely resembles art. He loves taking simple, fresh ingredients and adding a modern twist, while still maintaining the traditional aspects of the food he prepares.

Originally from Frederick, Maryland, cooking has always been a passion for Meyer. He is a graduate of York Technical Institute (YTI) in Lancaster, Pennsylvania, where he honed the culinary skills that he learned as a child from his Italian grandmother.

After school, Meyer completed an internship at Nemacolin Woodlands Resort in Farmington, Pennsylvania, and then joined the culinary team at L’Auberge Provencale in Boyce, Virginia. Before joining the Hillbrook team, he also worked at Mazzi’s Italian Restaurant in Leola, Pennsylvania, and Dish American Bistro in Charles Town, West Virginia.

In his free time, Meyer enjoys gardening and spends a good deal of time researching new cooking techniques and recipes.
